Steak fajitas: A delicious recipe
Steak fajitas or fajita has actually emerged from a blend of two types of traditional cuisines: the Mexican cuisine and the Texas cuisine. The meaning of the term fajita is ‘small girdle/belt’. The steak cut out from the beef comes in the form of a strip and exactly looks like a belt; therefore the name steak fajita. Apart from steak fajitas, you can also make fajitas out of pork, shrimp and chicken. In case of steak fajitas, the grilled steak is spread on papery bread made out of corn or flour (often called tortilla) and relished like a taco.
The steaks are generally cooked with a generous amount of bell peppers, tomato and onions and garnished with sour cream, salsa, avocadoes, shredded cheese, shredded cilantro or lettuce, guacamole etc. Steak fajitas can be a part of the menu of a grand dining event. In Mexico steak fajitas are available in any renowned restaurant or fast food joint. Here follows a delicious steak fajita recipe for all of you. Surely try this out at home to effectively satiate your appetite for meat.

Ingredients needed for steak fajitas:
- Salted garlic paste (made out of 4 cloves of garlic)
- Freshly extracted juice of lime-1/2 cup
- Cumin powder -2 teaspoons
- Olive oil-3 tablespoons
- Skirt steak-2 pounds
- Sliced bell peppers (red, green and yellow)-3
- Diced red onion-1
- Shredded cilantro-1/4 cup
- Warm flour tortillas-10
- Tomato salsa, sour cream and Guacamole (for seasoning)
Method for cooking steak fajitas:
- In a zip-top freezer bag, pour in lime juice, olive oil, cumin and garlic paste. Draw in the zip to seal the bag and shake vigorously to mix ingredients thoroughly. Now unzip the bag, put bell peppers, skirt steak, shallots and cilantro in to it and seal the bag. Turn it upside down time and again so that meat gets coated generously with the marinade. Refrigerate overnight or for 2 hours; in fact, the greater the duration, the better will the marinade penetrate. So the best idea is to allow an overnight marinating session. The steaks will turn tender if you marinate them properly. This will not only improve taste but will also allow you to chew with ease.
- Pre-heat grill or oven to considerably high heat
- Take the skirt steak out of the marinade and place on a plate
- Heat a heavy bottomed skillet until it gives out smoke. Pour in the marinated cilantro and vegetables and stir fry until they soften a little. Make sure that the fried vegetables acquire a charred appearance. Set aside.
- Place skirt steak on the pre-heated oven. Grill for 2-3 minutes on each side. Turn and check to make sure that all sides are evenly grilled
- Slice the meat in to thin strips and your steak fajitas will be ready for serving
Serving instructions: Place the steak fajitas on the warm tortillas, put a layer of fried vegetables on top, smear with sour cream, salsa and Guacamole and serve hot.
